On 8 September 2026, marking three years in Athens, Makris Athens by Domes welcomed Christian Cali and Oli Marlow of the two Michelin-starred ION Harbour by Simon Rogan for a special Six-Hands Dinner alongside Makris Athens Chef Patron Petros Dimas.
For one night only, three chefs and two distinct culinary destinations came together in one kitchen. Not simply to showcase their individual culinary identities, but to create something together.
At the heart of the evening was what connects the two kitchens: seasonality, sustainability, respect for the provenance of every ingredient, and a shared belief that the ingredient itself should lead the creative process. With this common ground as their starting point, the three chefs created a tasting menu exclusively for the occasion, exploring through each dish the relationship between place, technique, and contemporary gastronomy.
The collaboration also carried a particular significance. It marked the first time the team from ION Harbour by Simon Rogan had come to Athens, joined by F&B Manager James Christie, bringing with them the philosophy of one of the UK’s most distinguished contemporary culinary groups. Simon Rogan’s UMBEL restaurant collection has earned international recognition with a total of nine Michelin Stars and two Michelin Green Stars, reflecting a longstanding commitment to sustainability and a profound connection between the kitchen and the land.
For Makris, however, the evening of 8 September represented more than an international culinary collaboration. It marked a milestone in its three-year journey and, at the same time, an expression of the values that have been at the heart of its philosophy from the very beginning, with hospitality, seasonality, memory, and heritage remaining constant points of reference throughout its evolution.
Three years in which Petros Dimas’ contemporary culinary narrative has continued to evolve, while remaining firmly connected to where it all began.
